Hello,
I've got my online form set to how I like it, but the PDF version doesn't match. Is there a way to reset the PDF to match the online version?

To reset the template to default one, please create a new PDF document and delete old one:
In case of PDF form, you would need to delete existing PDF form first, because only 1 PDF form can be created for online form.

I believe there's a little misunderstanding. PDF form will not include data from submissions you already received, it would be blank fillable PDF. You could print it as well.
If you would like to have an exact printable copy of your online form to fill out with a pen, I can suggest to add a print button to online form temporarily: Print-Button-on-Forms Then, you can open online form and print it instead of filling out the fields. Would this work for you?
