Create Order Form Without Payment System

Hi! We are looking to create an order form for a merchandise table at an event and would love to build it with your system. We are going to be accepting cash only at the table so the form would need to tally up the total of the products, keep data, run reports, etc, but we do not need to have a payment system attached to it. How can I build this form without attaching a payment section? Or if there needs to be a payment section can we add a "cash" option that we just keep clicked. 

Yes, you can use the Purchase Order field for that, you can find it in Payments.
