I need to be able to track completion while keeping the survey anonymous and need to run iterative course surveys - surveys for multiple courses using one link rather than a link of each separate survey for each separate course.

Can JotForm do this?

Depending on this specifics of how the surveys are being filled, it might be possible to set up using JotForm.  If you mean that one user would fill out a single form containing all the surveys and update their submission as they go, that would be possible using edit submission links:

The only issue with that would be the need to send an email to the user filling out the form which would create a log of their email address.  Let us know a bit more detail regarding the setup you are looking for and we will see what we can do.
