In each of my notification e-mails I get no answers just a blank email, with a list of the topics, and the name of the sender.

Have you tried deleting the notification email and then re create it so that
it should reset the fields.
To delete email, click on "Email Alerts" button, select the notification
email, and then click on "Delete Email" button.
To re-create the email, click on "Email Alerts" button again, then click
on "Add New Email" and select "Notification" option and complete the wizard.
