I would like to figure out if your forms can calculate the difference between time duration and time of day. 10 PM -2 hours = hey p.m.

Yes, this is possible. Add the time field and enable the time range and duration indicator.
Now, make a condition that if time is filled, copy the value of the duration and deduct it with the time. Or just use the form calculation widget to copy the value of the duration and time.
This approach needs to have 2 time fields. One that has a duration and one for the time only.
Kindly check my sample form here https://form.jotform.com/90567248143965 and see if that is what you are trying to accomplish.
Looking forward for your response.
