Issues with new hire orientation packet form that I'm using

I have a form called new hire orientation packet that I'm using but having issues with. I have to update the form to reflect information that changes each time we hire new people at my agency - for example I update the orientation and training dates. So what happens is I send this form out as an offer letter, to provide info on orientation and training, and to allow new staff to submit items that have not been completed prior to their start date.

My issue is that each time I adjust the information (text based) it messes up the PDF output. Once these digital forms are filled out I have to print them and send them to our HR dept. for old fashioned filing, but I end up having to do the following to facilitate this process and end up with both a form with correct info and a nice looking PDF:

1. I edit the form and update the info

2. I create a dummy submission so that I can update and customize the PDF output to look correct in print with my most recent form edits in place

3. I reformat the PDF output so that it will look correct in print

3. I repeat this each time we hire new people every couple of months

I see that the system recognizes that the form has changed when I go to customize the PDF output but it also resets other formatting. Is there a way to update the PDF output without losing my previous formatting? I'm only changing dates and it resets all of the other work I've done on the previous PDF output.

As I understand, you want to keep your PDF output when form changed. 
Form and it's PDF document updates itself automatically. And this can't be disabled.
Instead of editing changed form's PDF document, you can create template PDF output and use it on changed forms. 
Please look at these steps to create PDF template.

Fill all fields.

Then select your template. This template will apply after form changes.
