How to change the email recipient in a form template?

I was interested in using JotForm to create a subscription form. I see that there are a few templates, but will I be able to link the form to my email signature?

You can definitely change the email address of the template you clone in your account, please follow this guide: https://www.jotform.com/help/41-How-to-Change-the-Email-Address-Used-for-Notification-Email  

If there is no email notification in the form, you can create it as shown on this guide: https://www.jotform.com/help/25-Setting-up-Email-Notifications
