The Email field is still blank on the email received today.

First, I suggest you to make the email field as required because as you could see, it is not required and therefore, users might left that unaswered so when you received the notifications, the field is blank.
Second, re-embed your form using the iframe method: How to get your Form's Iframe Code to avoid script conflicts when the form is embedded into your website.
