Wondering how i can replicate below as it looks like when you are typing your heading, it seems to run on and on without breaks and space...but want to make it looks like what's below

I recommend that you remove the header field and use the text field for this purpose. In the text field, you can format the text as desired.
Please look at these steps.
1. Add a text field.
2. Customize it and save. You can use breaks and spaces.

That means i don't need to rebuild those forms from scratch...just have to
edit them right? Is that correct?

Yes, you only need to delete or remove the header field and replace it with the text field so you can achieve what my colleague showed you.
