how do I limit the result of calculated value from another field so it only displays what I want?
Here is an example of what I am doing.

Thanks for the screencast, it clearly showed us what you want to achieve. So to meet your requirements, we need to overwrite the value using contains condition.
For example, if the color field contains a maroon word, then insert the Maroon word in that field to overwrite the text.

I think the problem is that I have define this for every single color that the item is available for sale. that is why I only used the option to just capture what was selected from the radio button.

Yes, you only need to create a contains condition for all the color options you have.
