If I create the form in our JotForm account, can the completed form automatically be routed back to another user, so that they don't all come back to my email address?

I'm not sure if I understood your question correctly, do you want to send the notification emails to someone else instead of you?
If yes, you can update the Recipient Email in the Notification email with the new email address. Go to Settings > Emails > Notification Email > Recipients and update the Recipient Email field.
