I have tried using the "today+2" but that does not seem to be working... any help is appreciated.

If I understand correctly, you want to disable 2 days from the current days. So the available date should be only from 3rd days onward as of today.
To do that, you can set Disable Custom Dates of Date Limits feature to
today+1
today+2
it will disable 2 days ahead.

Thanks ... in your online tutorial of this ... that does not work ... it needs to go into the disabled text field ... its confusing. thanks for your help.

We apologize for the inconvenience caused. But just to clarify, in the user guide, the Start & End date example were referring to active date ranges and not disabled date ranges. Its the other way around.
So to disable dates, you can put it in the Disabled Custom Dates option instead.
I checked also on your form, and I can confirm the disabled date feature is working now.
