For example I use youu CONTACT FORMS on my website. Does this mean that on a free account any CONTACT FORMS that are in my website, that my clients complete and click submit, may not be encrypted as the data is transfered from my website to jotborm and then from jotform on to my email?

In your case, if you embed your forms using SSL encryption method, and if you receive more than 10 SSL submissions in a month, the form will get disabled along with your account until the 1st day of the next month , when the counter gets reset back to zero
