Is there a maximum number of submissions with long text fields having a maximum of 1000 words?

There is no submission limit based on form fields. You can get unlimited form submissions which have long text fields.
But there is a limit for the field's answer size. One field's answer must be lower than 64kb. It means nearly 35000 words. You can use your form smoothly.
