Is there a way to limit the number of submissions for single choice form element?

Creating an event registration form - since there are no widgets that allow for specific dates to be available, I'm using the Single Choice quick form element for attendees to select the date they wish to attend. I'm trying to find a way to limit the number of form submissions per single choice selection

Example:

O June 25th (8 submissions allowed)

O July 2nd (8 submissions allowed) etc..

Wondering if there's a work around with this, preferably one that would gray out past dates or unavailable/full dates?

Our Date Reservation Widget has 1 selection limit per date so I would suggest using Gift Registry Widget as a workaround.

With Gift Registry, you have to define the dates as options then add quantity limit per option. Once the user picks a date and submits the form, the quantity option will be depleted until they can't pick the date when the quantity left is zero.
