I have been working with my merchant provider and they need me to meet pci standards, are payments collected through forms I make with jotform safe and protected by pci standards?

Your form seems to have an Authorize.Net payment field. Payments made in your form are communicated to Authorize.Net's payment servers, hence the need to provide your Authorize.net account's API Login ID and Transaction Key. All transactions are secure and encrypted, therefore, your customers' information are safe from prying eyes.
Although I'm not familiar with PCI standards, Authorize.net has been one of the leading and most trusted payment gateways available to online merchants and sellers.
