Remove an option once selected

For the love of all things simple - how in hell do you do this-I have tried conditional logic, i've tried 1000 widgets - nothing works but it should be simple

I want to only allow one person to select one date from the five available.  I want the date to then DISAPPEAR  from the form so that no one else can select that date. I just want a simple solution but conditional logic doesn't work effectively

seriously this should be SIMPLE
