As soon as I turned my submissions into a spreadsheet on jotform the notification emails that I had in my inbox deleted themselves...I tried checking my trash and recycle bin and they are not there. Where did they go and who took them out of my inbox? We were keeping them because they had not only the day but the time which our clients filled them out. Does this ussually happen?

Jotform has no control on how an email application works. Turning submission or downloading the submission into an excel has no effect on emails at all.
May I know what email applicastion/software you use in checking your email?
Some email application are configured to delete emails automatically when a certain date or condition is met.

It is through a host site like roundcube. It has never happened before.

It sounds like your email host may have detected it as spam and deleted it. Did you try checking a Spam/Junk Folder? Sometimes it can be a long delay before anything happens due to massive amounts of users for the provider or there may have been a change in their ToS possibly.
I checked your email against our bouncelist but I didn't find it there unless you have another email that is different which you are experiencing this problem with?
Something that can assist you with not receiving emails would be to read through this guide http://www.jotform.com/help/208-How-to-setup-email-alerts-to-prevent-emails-not-being-received-issues.
Additionally though you may need to more importantly Whitelist JotForm's IP's with your email host.
