I'm trying to see whether new sumbissions can just add themselves to a spreadsheet that is housed in my dropbox.

It will create a PDF file to this path: Jotform > Form Name > Submissions ID > PDF File + Uploaded Files (If you have upload field to your form). It is not possible to sort them in your existing spreadsheet file in dropbox. I would suggest you to integrate your form using Google Spreadsheet:
