Hi there,
We're trying to update our Stripe account to a new one but are having trouble.
Can you please advise?

Are you referring to this Form?
To update the Stripe account you would have to disconnect the Stripe account first and then connect with the new account. Also, if you change the live mode to sandbox mode it will disconnect your current account.
Please give a try and let us know how it goes.
Also, if you are still unable to disconnect the account then please share the screenshot of the browser console.
