Is there any way to add a specific Day, i.e. Saturday or Sunday. - plus the time.????
i.e. So that form is not available on Sunday during certain hours ???

Yes it is possible to set the condition to use specific day also.
Please refer to the guide : Conditionally Enable or Disable a Form Based on Time
The idea should be the same.
You just need to add/use Date Picker field into the form so that you can use in the Conditions to set the condition rules to trigger base on the date/day/time you specify.

I do not see a "Date Picker" that lets you distinguish between Days of the week.
i.e Sunday, Monday, Tuesday, ect.
I want to set my form - not available on Sundays.
Can anyone help, or is it not possible to do this with jotform???

Here is what I can suggest:
You can add a regular Date Picker element and a Text warning as recommended in the guide. Then, Date Picker should have a 'current' date set as default. Here is a screenshot of this step:
After this, you can create the following conditional statement. It would hide form fields and show a warning if Date is equal to Sunday:
