What happens if I edit my form while someone is filling it up?
Will there be any disruptions in filling process for that person?
Will they be able to fill successfully the version they’ve started filling up?

Yes, they will still be able to continue submitting the version of your form that they've started or the version of the form when it was loaded.
Below is a sample scenario.
Let's say the form looks like this when a respondent loaded it prior to updates.
However, at the same time that respondent is filling up your form, you have updated the form to this.
When the respondent submitted the form, below is the data that will show on the submissions page.
Email field data still shows because it is still the same field just an updated field name.
The Comments field is empty because it is already a different field, the old one (Long Text Entry field) that was submitted was deleted.
Selected options on the Multiple Choice field was still saved/recorded even if the options were updated.
Selected option in the Single Choice field was untouched and it still there.
Notice that the new submission after the changes made to the form already shows the updated field and field options.
Also, if you edit the submission prior to the update, it will already show the updated version of the form.
