When I create my own form, is it available for all to see eventually? Is there a way to prevent my form from becoming part of your website template? etc?

Only you can see the forms and submissions of the forms that are created on your account.

The created forms are not added to our Template Gallery by default. The form will be added to the Template Gallery only if you share it there.
