When I limit the date ranges the calendar still starts at today's date. So for birth date with a +18 age limit people have to click at least 18 times on the back button and up to 100 times for older people.
When I choose a default value that's more or less in the middle (eg 1990/01/01) the calendar starts at that date but then when people don't enter anything in this required field it will take that entry 1990/01/01 as their answer.
I've tested some other date widgets but none of they seems suitable.
Is there a way to fix this so the calendar will start halfway instead of on today but WITHOUT counting that start date as an answer?

You can use the "Birth Date Picker" widget to ease the selection process:
Your users can select the date with drop-down fields easily with this widget. You can also restrict the year interval under the "General" tab which appears when you click on the "gear" icon of the field:
