I'm building a form for a charity that at present does not have banking systems such as paypal etc and so I'm looking for the option to be able to tick which day they would like to attend, showing the cost for the day and then to be able to pay offline with a direct deposit or cheque for example.
How can I do this?

You can use the Purchase Order tool which works for receiving offline payments such as check, wire transfer, money order, and other offline payments.
