I can do this using "products", as it gives me the options, but not with subscriptions. I cannot see a way to add options to a subscription.
Is there a way to add Products to a subscription? I can use Square or Stripe.

I guess you are referring to this form. I can see you have created the subscription form. Can you provide more information on what you are looking for?
E.g. Do you want to allow your users to select a start date or date range. Should the date selection vary with the subscription?
If you can provide details on you would like to achieve, we can suggest the best approach.

Unfortunately it is not possible to add options in subscription products. You may like to use regular form fields to list your products. You can then manually pass the amount to payment tool for subscription payment.
