I'm trying to change the email address my forms are sent to, but I can't set up sub accounts and I can't edit that setting. I can't add an account without deleting my current account which would make me unable to go back and change it. Help!

If I understand correctly the problem, you just want to change the Recipient Email address on the Notification Email on your form.
You can do this in the Form Builder -- go to SETTINGS / EMAILS >>> Edit Notification. And then click RECIPIENTS tab.
In Recipient Emails box, you can add another recipient email address or delete the existing one and replaced it with a different email address.
