Hi,
The form creator also needs a copy of the signed Adobe document, but it seems to automatically only go to the responder.
Just under where I have authenticated my Adobe account, it confirms that only the sender receives this?
Please help!! :)

The process of the Adobe Sign widget is that the submitter will fill the form and sign and submit it. As the form owner, you will get a confirmation from Adobe Sign about the document that is being signed by the submitter. It will ask you to sign it. Once you signed the document, the submitter will receive its final copy, signed by all parties.
