What workflows might be suggested for very long forms. That is, forms that users may have to come back to and/or fill out over multiple days. Is there a way to save progress and come back to them? What if users want to create multiple instances of a form and work on them simultaneously before submitting? Can you download the form as a PDF, perhaps, to suit this workflow? Are there any suggested solutions that JotForm can provide?
Also, how are the results provided? Is it possible to manipulate this at all (e.g. send in email as PDF, email to URL as HTML, etc)?

You can attach the PDF Document in the notification email and autoresponder email.
