Hi Jotform,
wondering if you can assist with the workflow we're attempting to execute (or offer alternatives):
1. Internal employee initiates form and submits a small portion of the form
2. Autoresponder sends editable link to Customer inviting them to fill out the remainder of the form
3. Notification gets sent to internal employee after the customer completes the form (essentially after the second form submission). Is this possible to complete within Jotform?
4. Employee either approves or rejects customer form submission. How do we include a hidden approval option for internal employee to modify at this stage of the review process?
5. Email customer reminder if form hasn't been completed within 1 week (again, not sure if this is possible w. Jotform?)

3. Notification gets sent to internal employee after the customer completes the form (essentially after the second form submission).
You can go to Settings > Emails > Notification Email > Advanced and enable the Send on Edit option so the form will send a notification email when someone opens the form with edit submission link and submit it.
You can also take advantage of conditional emails if that helps you: How-to-Send-Email-Based-on-User-s-Answer
4. How do we include a hidden approval option for internal employee to modify at this stage of the review process?
You can hide the form fields and set a condition to display the field so they will only display if the condition satisfies.
You can add Get Form Page URL widget to the form and set a condition to display the field when the URL of the form contains "edit". If you wish, you can also add a password field and share the password with your internal employee. And set a condition to display the field only if the password matches.

5. Email customer reminder if form hasn't been completed within 1 week
You can do this using conditional emails. Add a date field to the form and set the default date to the Current Date so you can get the date of the first submission. Then set a condition to send an email after 7 days from the first submission date.

Do you see an alternative way to execute Step 1?
Essentially, the employee needs to update Contact Name/Email/Unique Inventory Numbers and then have this sent to the customer to fill out the remainder of the form.

I assume on the step 1 you're currently sending the direct form URL to the user so he/she can fill it out and submit the data.
I'm a bit unsure about what you're referring with "an alternative way to execute", please kindly provide more details so we can further assist you.
