So the free version seems to fit their needs. My question : if, by chance, they get more than 100 emails, what happens to the the emails that go over the limit? Will they not be sent to them?

If your form bypasses the limits, your forms will be temporary disabled. Your users will not be able to view the form fields instead this message will be displayed to your form.
While you are near your limits, JotForm will send you a notification message indicating that your forms will be scheduled to be disabled on the specified dates. Upgrading immediately to Premium will prevent this from happening, or if you do not wish to upgrade you have to wait until the monthly submissions reset period comes which will be every first day of the following month. Example, April 01, 2013 (today).
