Square > Payment Authorization: allow 50% deposit and charge the rest later.

Also, when using Square for payment collection on contracts is there a way to make it to where people can pay a 50% deposit of the full amount or be able to pay the full amount?

Unfortunately, that is not possible. You can only enable payment authorization to charge the full amount at a later time: https://www.jotform.com/help/292-How-to-Enable-Payment-Authorization
