Is there any way to fix this? When I amend a form the e-mail validation seems to be keeping the old information and not including the new data that is needed.

If you amend the form, it is also recommended to update the form's email template. This will ensure that the form's updated fields will reflect on the email notification.
Please update the form's email notification template also. You can do this by creating a newer template using the Add New Email button.
