How do I update my Paypal intergration without having to delete the page? How Do I change the form elements?

I do not have Paypal Pro anymore.  I would like the opportunity to change to regular Paypal. 

I do not want to delete this page and have to re-create it..

You can remove the PayPal Pro on the said form and add the regular PayPal Checkout field.

All the associated data from PayPal Pro will be retained as long as you'll be using a Paypal payment field. So there's no need to delete the form.
