Is there a way for us to check each past month's submissions and usage statistics in order to see how many people view and submit our forms for each month?

You can check the Analytics of the forms. Here is the guide:

You can also check your usage from the Usage tab in the portal. However, it is available only for the current month.

In order to access the Usage tab, you should click on the avatar icon of your account and then click on Settings. Then you should go to the Usage tab.
