We have a jotform application on our website and are receiving sporadic email notifications regarding form completion. Can you please provide the email server logs to determine if this is an issue on our end?

I dont see any issue with your form. To ensure that emails are delivered, you should actually change your "Sender Email" of your notification to "firstname.lastname@example.org".
The problem with not using email@example.com as the sender email of your notifications, is a lot of email service providers can filter as spam, emails which dont originate from the same domain where the form is embeded.
Unless you have option to whitelist our email server ip address, leaving the sender email of your notfications as firstname.lastname@example.org may the best way to ensure our emails dont get blocked by any mail service provider.
We are receiving some emails, so I do not believe this is an issue with
our spam filter since all are received from the same sender. Can you
please forward the email server log, so we can ensure all of the emails
are being generated correctly? I have identified which applications
have been received by email and which ones have not.
As my colleague Sidharth already mentioned, the probable caused of having sporadic email notifcation is due to the form's email notification settings. We suggest that you adjust this on your form's setup. You may also review this guide to further understand the details
