I successfully submitted a form paid via PayPal a few days ago. Now all transactions are showing up as incomplete.

I have checked your form and you have two successful payments in the form.
Do note that if the form respondent has not completed the payment, then the submission is placed in the incomplete payments.
If the user has successfully paid the transaction already but the submission is still in the incomplete payments, you may try to enable IPN.
