I saw that deselect option is not available on the single choice option. I read that a way around this is to do multiple choice, but limit the entry to 1 choice.
It does not seem to be working. Can you check and see what I am doing wrong and how I can adjust the setting so that the participant can only choose 1 option but can deselect if they clicked by mistake?

You should activate the "Entry Limits" option of the Multiple Choice field. Then you need to set the "Maximum" to 1.
After that when your users try to select more than one item, they will get the following warning:
"The maximum number of selections allowed is 1."

I checked your form. It seems that it works fine (as expected).
If you try to select more than one option, it will display a warning. Please refer to the attachment.
Please note that when you limit the entries in a Multiple Choice field, it will still allow the user to select multiple options. But it will not allow the respondent to proceed. So, it will display the above warning when he tries to click on the Next button and proceed.
