Hi,
We created a form last year, and in order to run it again we would like to apply some structural changes. For example:
- Have a drop down list of only a certain number of countries (not all of them are needed)
- Allow for fields to disappear depending on previous choices

Have a drop down list of only a certain number of countries (not all of them are needed)
I believe this can be achieved using the Address field. You can hide the other fields and show the COUNTRY drop-down. This, however, shows all the countries from A-Z. Here's a quick guide:
But if you want to include only a few Countries that a user can choose from, I believe you have to create your own simple drop-down field and just add the Countries you want to be included.
Allow for fields to disappear depending on previous choices
You can use SHOW/HIDE FIELD conditions to achieve this. Please refer to this comprehensive guide on How-to-Show-or-Hide-Fields-Base-on-User-s-Answer.
