I would like to set up a partial payment plan using Stripe where my customer is billed a fixed amount for a set period of billings. E.g., we have a camp registration that costs $875/session. I would like to offer a partial payment plan that bills the customer $295/month for 3 months. I looked at subscriptions but not sure how i can limit the billing quantity.

I'm sorry, but the number of payment is unavailable with Stripe. If you set up a recurring item, that would be infinite, and the user has to cancel it after 3 payments for the partial payment plan.
A workaround here would be to set up two forms. One for the one-time payment, and another for the recurring. The recurring, you would need to set the limit on Stripe once you receive the payment.

Well, that's what I thought. So, to limit the number of recurring charges against a customer's credit card, i have to go into Stripe directly and set the limit there? Not really certain how that is done but i guess i'll have to contact Stripe.

one more question. Does PayPal offer recurring payments with a limit set?

I'm sorry, I was in the impression that Stripe's 'threshold' option can do the payment limit, but it turns out it is not. I would suggest verifying this with Stripe. They might have a workaround for you that I did not find.
Yes, Paypal supports recurring and option to limit the number of payments.
