I need a field with values visible by everyone, but editable only by the Administrator after the completion of the form in edit mode.
field radio buttons, with three options: A - B - C
A default option, which is visible but not editable by the user.
Admin can change it, after filling in the form to select subjects?
Radio button options aren't editable by default. I think you mean on text boxes with default values? If so you can achieved that using two different fields.
1. Text Box and set it as readOnly. Form users will be able to view it but they can't changed it.
2. Hidden Box, under Power Tools. This is for the admin only field, you can change it's values when editing on your form submissions page. Here's a related guide: How to Add a Submissions Status
