What happes to the data if we cancel subscription?

WE are planning to use Jotform for issue tracking and i need to check where the data are stored and what happen to the data if we terminate the subscription with Jotform? 

My understanding is that we can encrypt the form and data if we have purchase a plan, does this protect also applied to the Starter plan? 

Does the security of the starter plan is the same as the rest of the plan? If not, which security measures are difference from the rest of the plan. 

Please advise.

Please note that form encryption is available in free plan as well. When you cancel your subscription and downgrade account to free plan, your forms will not be deleted but since free account has submission storage limit of 500 submissions, all your over quota submissions in excess of 500 submissions will be deleted automatically. 

The remaining data even if they are encrypted, it will remain encrypted and will work as expected. All data is stored on our server and can be viewed from form's submission page.
