Thanks for reaching out.
If you are referring to changing it to a fixed email, I'm afraid that is not possible.
The recipient of the Save and Continue function is the account that is currently logged while filling up the form. If in case there is no account logged in while saving the form, the screenshot below would appear asking the user as to where the saved form should be sent:
