I have a silver plan, that says no branding, but jotform still shows in emails and text messages if I send a form. I also have it unticked in my plan.

Hi,
To clarify, are you referring to the logo on the email notifications? If so, you can manually delete the JotForm logo on the email template:
As for the Text messages, I believe that it can be configured too. Please refer on my colleague's answer on this thread: How-do-I-send-SMS-text-messages
