I'm trying to integrate with mailchimp but on jotform the only options I see are name and email but my mailchimp form also has birthday. When I click the dropdown on jotform it wont show any category for birthday (only email and name).

I was able to reproduce issue with the MailChimp integration.
But I think you should also fix your form a bit. Please try not repeating the "Newsletter" field at least more than once. And try to make the birthday field a required field at least, so that you can be able to capture this data in your mailchimp list.
I will do a further test to confirm if there is a bug on the MailChimp integration.
I will update you about this in a while.

I have now created a bug ticket and forwarded the issue on MailChimp integration to our next level support. You will be notified via this thread as soon as an update about the fix is available.

MailChimp's birthday fields can only accept month and day values, i.e., in MMDD format only. None of the built-in date fields on JotForm matches this format. That is the reason why we have not included it in our integration wizard.
We suggest adding a 'date' field to your MailChimp list instead.
