For a Select Multiple form entry, with calculation values assigned to each option, It appears that the calculation value is always the sum of the items selected. Is that the only option? Are other functions available, like the product of the selected values?
And although I've added some negative numbers as values, it appears to sum the absolute value of the selected items. Is there any way to include negative values and get the true sum?

Hello Charlie,
You right, when you use multiple selection in a calculation form it will sum all selected values. But you can give negative numbers to calculation values. Here i created an example and i used negative value for second option. You can see in screenshots it works.
And for your other question, if you want to apply other type calculations, my advice is to use input table. On calculation widget you can use every each row/column value. Here some screenshots for example :
