I have created a registration form for a hockey team on my website and for some reason I receive empty submissions every day even though all fields require validation.
Here is the form:

I suggest re-creating the Notification email again. Use the Add New Email button to do this.
It is possible that the form was modified and the email template was not updated with the changes done on the form. Re-creating the email notification will ensure all fields are render again on the email template.
Please inform us if the issue persists even after doing this already.
