When I copy text from my submissions, once they have been downloaded from the site as PDFs, the pasted text comes out as characters like these below:
Is there a bug in how your PDFs are encoded?

I cannot replicate that after downloading my submissions as PDF. What is your current PDF Reader/Viewer? We recommend Adobe Acrobat or Adobe Reader Updated Versions.

I am using Apple Preview, and would very much prefer to use it.
I tried copying and pasting from Acrobat Pro and had the same problem.
I have tried pasting in to Word and TextEdit and the results are the same.

I have just been able to replicate this problem copying from Acrobat Reader into Notebook on Windows 7.

Hey Drew, I think you mean Notepad instead of Notebook if I am correct? Is this what you are copy and pasting it into? Can you please confirm this?
If so, you might want to use something else that is more advanced such as Notepad++. There are several known conflicts to often occur when trying to get notepad to read some text-types since it doesn't always encode or decode correctly in Notepad so you would need to use something that are more capable of reading from multiple sources when you copy and paste things. I've seen this happen on a lot myself.
Is this what you are trying to do?
