I'm not sure I understood your requirements correctly.

To clarify, do you want your submissions to be in sheet view?

Can you please explain further how you would like your card form to be sorted?

When I look at submissions in the Sheets view, I can create a new tab which views submissions as cards. I can see how to filter the cards, but not how to sort them.

For the application we are looking at, it will be important to be able to sort cards in order of one of the fields in the submission.

There is no option to sort the cards as this feature is available only in the Spreadsheet view. A workaround for that is to change the view type to "SPREADSHEET" then sort the data there. After doing so, revert to "CARD" view.
