I am trying to make it so folks can schedule time at our apartment pool- thanks Rona- but I'm not sure how to clear an appointment if someone changes their mind. I want other folks to be able to schedule the time if the original reservation gets canceled. I can't find how to do this, what am I missing.

Kindly be informed that one way to re-free an occupied time slot in Appointment field is deleting/editing associated submission.
You can easily edit submissions received through your forms via the submissions page as shown below:
